This creamy deliciousness combines cashews, dates, orange and vanilla in a spread that you won’t want to stop eating. I tell you – it’s that good! Such natural sweetness and the velvety texture of the soaked and blended cashews. What would we do without cashews these days?
It seems like cashews are the base for so many things – sauces and spreads and everything in between. Don’t you just love them? They give everything they’re in such a creamy consistency.
I’ve always loved dates, especially Medjools. They are so soft and gooey and SWEET. By themselves they take care of any sweet tooth – nature’s candy for sure.
I’m sure you could use other varieties of dates in this recipe but Medjools are the best by far in this Cashew Date Orange Spread in my opinion. They’re the freshest dates and have the perfect sticky consistency.
This spread is perfect to go with my Vanilla Orange Quick Bread as a delicious dessert – quite a taste treat! It also would be great on toast, muffins, apple slices, etc.
- 1 1/2 cups raw cashews, soaked in water overnight
- 3 Tbsp fresh orange juice
- 2 tsp orange zest
- 1 tsp vanilla extract
- 2 Tbsp pure maple syrup
- pinch of salt
- 1 probiotic capsule emptied and gel cap thrown away
- 1/2 cup Medjool dates, chopped
**Remember to soak your cashews in water overnight or at least for a few hours**
Put all the ingredients EXCEPT THE DATES in a high speed blender and blend until smooth and creamy
Scrape the cashew blend out into a bowl and stir in the dates
Place a small sieve or colander over a bowl and line it with cheesecloth that extends over both sides
With a rubber spatula, scrape the mixture into the center of the lined colander and cover with one side of the cheesecloth and then the other
Place in the refrigerator like this overnight
The next day, transfer the spread to a bowl or container and eat on cake, toast, muffins, apple slices, oatmeal or whatever sounds good to you!
Refrigerate in a container with a tight fitting lid
